Family Farming Specialty Peppers in the San Francisco Bay Area Since 1980

Hungarian Lecsó

Our friend Anna Paul gave us this traditional Hungarian recipe. Pronounced "letcho" in Hungarian, it is a stew that showcases peppers and sweet paprika. Enjoy it warm or at room temperature.

(Serves 4)

       1 medium onion, chopped

2 tablespoons cooking oil

Spicy sausage, sliced (optional)

1 heaping teaspoon Hungarian paprika

4 medium sweet bell peppers, chopped

2 hot banana peppers, chopped

2 medium tomatoes, chopped

2-3 tablespoons butter

2 eggs, beaten

In a saute pan over medium heat, add a little oil and cook onion until translucent.  If adding sliced sausage, brown it lightly with the onions at this point.  Add paprika and stir to cover onions.  Add peppers and tomatoes.  Salt to taste.
Simmer until peppers are tender.  While simmering, add the beaten egg and stir constantly until the egg is solidified.
