Hungarian LecsóChop and combine
4 medium sweet bell peppers
2 hot banana peppers
2 medium tomatoes
1 medium onion chopped
2 -3 tablespoons of margarine or butter
2 tablespoons cooking oil
Heaping teaspoon of Hungarian paprika
2 beaten eggs
Sliced spicy sausage (optional)
Sauté the onions until translucent-if adding sliced sausage, brown it lightly with th onions at this point.
Add paprika and stir to to cover onions, Add peppers and tomatoes. Salt to taste.
Continue to simmer until peppers are tender. While simmering, add the well beaten egg and stir constantly until the egg has solidified.
Serve warm or at room temperature
